Ingredients:
3 cups frozen corn, thawed
2 small zucchini, halved, sliced
1 red bell peppers (either red or green or a combo) or 1 green bell peppers, chopped ( either red or green or a combo)
1 small onions, chopped
2 tablespoons olive oil
1/2 teaspoon chili powder
1/2 teaspoon dried oregano leaves, crumbled
1/4 teaspoon salt
1/2 cup shredded cheddar cheese or 1/2 cup monterey jack cheese

Directions:
Saute zucchini, pepper and onion in a large skillet in oil over high heat 2 minutes; stirring frequently.
Add corn and seasonings; continue cooking 2 minutes or until heated through.
Top with cheese; cover.
Cook 1 minute or until cheese is melted.

Servings: 6

Time preparation: 10 min.

Time total: 15 min.
