Ingredients:
1 lb sausage, browned and cooled
1/4 cup green onions, chopped
1/4 cup celery or 1/4 cup green peppers, chopped
2 cups grated cheese
8 (8 inch) flour tortillas
4 eggs
2 cups milk
1 tablespoon flour
1/2 teaspoon garlic powder
2 cups grated cheese
chopped green onions, to garnish
tomatoes, to garnish

Directions:
mix sausage, green onion celery or green pepper.
mix eggs milk flour and garlic powder.
place 1/2 cup meat mixture in middle of tortilla.
roll and place in 9 x 13 inch pan seam side down.
pour egg mixture over rolls.
cover and refrigerate overnight.
bake coverd 45 to 50 minutes or until set.
sprinkle with cheese bake 5 more minutes.
let stand 10 minutes before serving.
garnish with green onion and chopped tomatoes.
serve with enchilada sauce if desired.
