Ingredients:
3 tablespoons butter
1 cup couscous, plus
3 tablespoons couscous
1/2 teaspoon turmeric
1/2 teaspoon coriander
1 small cinnamon sticks
2 cups vegetable stock or 2 cups chicken stock
1/2 lb mushrooms
1/2 teaspoon salt
1/2 teaspoon cumin
1 star anise
1 bunch chives, chopped
Directions:
Melt butter in a saucepan, add mushrooms, cover and cook until soft.
Stir in couscous, salt, turmeric, cumin, coriander, anise, cinnamon and chives.
Cook for 1-2 minutes.
Pour vegetable stock over the mixture, cover and set aside for 5 minutes until the liquid is absorbed.
Fluff up and serve.
