Ingredients:

  • 6 large eggs
  • 1 lb. ground pork sausage
  • 1 cup all-purpose flour
  • 2 eggs, beaten
  • 1 cup breadcrumbs
  • Salt and pepper to taste
  • Oil for frying

Instructions:

  1. Begin by boiling the eggs. Place the eggs in a saucepan and cover with water. Bring the water to a boil, then reduce the heat and let the eggs simmer for 6-7 minutes. Once done, remove the eggs from the pan and place them in a bowl of ice water to cool.
  2. Next, take the ground pork sausage and divide it into 6 equal portions. Flatten each portion into a circle and place a cooled egg in the center. Carefully wrap the sausage meat around the egg, making sure to completely cover it.
  3. Set up a breading station with the flour, beaten eggs, and breadcrumbs in separate bowls. Season the flour with salt and pepper.
  4. Roll the sausage-wrapped eggs in the flour, then dip them in the beaten eggs, and finally coat them in breadcrumbs. Repeat this process with all the eggs.
  5. Heat oil in a deep-fryer or a large pot to 350°F (175°C). Carefully lower the breaded eggs into the hot oil and fry for about 5-6 minutes, or until the sausage is cooked through and the breading is golden brown.
  6. Remove the scotch eggs from the oil and place them on a paper towel-lined plate to drain excess oil. Allow them to cool for a few minutes before slicing and serving.
