Ingredients:
3 lbs yukon gold potatoes, peeled and quartered
1 cup heavy cream
2 teaspoons salt
1/2 cup butter, softened
2 cloves garlic
6 tablespoons chopped fresh parsley
salt and pepper
Directions:
Boil potatoes and salt covered with water until done.
Meanwhile, place butter, garlic and parsley in food processor and process until smooth.
Drain potatoes well and place back in pan over low heat.
Add cream and garlic butter and mash by hand.
Add salt and pepper to taste.
