Ingredients:
1 3/4 cups whole wheat flour
2 1/4 ounces yellow cornmeal
1 1/2 teaspoons baking powder
1 1/2 teaspoons baking soda
1 teaspoon allspice
1 teaspoon cinnamon
1/2 teaspoon nutmeg
1/4 teaspoon cloves
1/4 teaspoon salt
2 cups shredded carrots
1 1/4 cups water
3/4 cup golden raisins
1/2 cup honey
2 tablespoons vegetable oil
1 teaspoon vanilla
Directions:
Preheat oven to 350F.
Combine all ingredients given, in order, in large bowl.
Pour batter into two 9-inch layer pans or one 9×13 inch pan.
Bake until center tests done, approximately 25 minutes for layers and 30 to 35 minutes for 9×13 inch.
