Ingredients:
4 cups corn kernels
1 red onions, finely sliced
1 jalapeno peppers, seeded and finely chopped
1 tablespoon freshly squeezed lime juice
1/4 teaspoon cumin
1/4 teaspoon ground coriander
salt & freshly ground black pepper
1/2 coriander leaves, coarsely chopped
Directions:
Put corn, onion, and jalapeno in a large bowl.
Whisk together lime juice, cumin and coriander.
Slowly whisk in the olive oil and season to taste.
Before serving, add coriander leaves and toss to mix.
Serve cold.
