  2. Let the milk sit for about an hour to allow the culture to work. During this time, the milk will begin to thicken and curdle.
  3. After an hour, add the rennet to the milk and mix well. Cover the pot and let it sit for another hour.
  4. The milk should now have formed a solid curd. Use a long knife to cut the curd into small cubes. This will release the whey and help the curd to firm up.
  5. Slowly heat the curd to 100°F, stirring occasionally. As the temperature increases, the curd will begin to shrink and release more whey.
  6. Once the curd has reached the desired temperature, remove it from heat and let it sit for a few minutes to firm up.
  7. Using a slotted spoon or cheesecloth, remove the curd from the whey.
  8. If you want to make a hard cheese, press the curd under a weight for a few hours or overnight to remove more whey.
  9. Once the cheese has reached the desired consistency, add salt to taste (if desired) and form the cheese into the shape you desire.
  10. The cheese can be aged for a few days to a few months, depending on the type of cheese you are making.
