Ingredients:
1 kg skinless chicken thighs, halved
1/2 cup red capsicums, diced
1/2 cup green capsicum, diced
1 can tomato soup
3 tablespoons vinegar
2 tablespoons soy sauce
2 tablespoons brown sugar
2 tablespoons barbecue sauce
1 cup crushed pineapple, drained
1 teaspoon garlic, crushed
1 teaspoon fresh ginger, grated
Directions:
Combine all ingredients except chicken.
Place the chicken in a baking dish and cook for 20 minutes.
Pour of the fat and juices and discard.
Pour the sauce over the chicken and return to the oven.
Bake for a further 20 minutes or until cooked.
