  1. In the top of a double boiler or a heatproof bowl set over a pot of simmering water, melt the cocoa butter. Use a candy thermometer to ensure the temperature does not exceed 120°F.
  2. Once the cocoa butter is melted, remove the bowl from the heat and add the cocoa powder and sweetener to the melted cocoa butter. Stir until the mixture is smooth and well combined.
