  3. Add the starter culture: Once the milk has cooled, add the 2 tablespoons of plain yogurt to the pan and whisk or stir it in thoroughly. This will introduce the beneficial bacteria into the milk and start the fermentation process.
  4. Incubate the yogurt: Pour the milk mixture into a large glass jar or container and cover it with a lid. Wrap the jar in a small towel or blanket to keep it warm and place it in a warm, draft-free spot in your kitchen. You can also place it in a cooler or oven with the light turned on to maintain the temperature.
  5. Wait for the yogurt to set: Let the yogurt incubate for 6-12 hours, depending on how thick and tangy you want it to be. The longer it sits, the thicker and tangier it will become.
  6. Chill the yogurt: Once the yogurt has set to your liking, place the jar in the refrigerator to chill for at least 2 hours before serving. This will stop the fermentation process and thicken the yogurt further.
  7. Flavor the yogurt (optional): If you prefer flavored yogurt, you can stir in sugar, honey, or fruit to taste before serving.
