Ingredients:
2 cups dried couscous
1/2 cup red wine vinegar
1/2 cup extra virgin olive oil
1/3 cup water
1/2 cup diced tomatoes
1/2 cup chopped parsley
1/2 teaspoon dried mint
1/2 teaspoon salt
1/2 teaspoon black pepper
Directions:
In a bowl, combine couscous, vinegar, olive oil, and water; let sit for 30 minutes. Couscous will absorb the liquid.
Add remaining ingredients and stir to mix well.
