Ingredients:

  • 1 lb boneless, skinless chicken breasts or thighs
  • 1/4 cup soy sauce
  • 2 tablespoons sugar
  • 2 tablespoons mirin
  • 1 tablespoon vegetable oil
  • 2 cloves of garlic, minced
  • 2 teaspoons grated ginger

Instructions:

  1. In a small bowl, combine the soy sauce, sugar, and mirin. Mix well until the sugar is dissolved.

  3. Pour the marinade over the chicken, making sure that all pieces are well coated. Seal the bag or cover the dish and refrigerate for at least 30 minutes or up to overnight.
  4. Heat a large skillet or grill pan over medium-high heat. Add the vegetable oil, garlic, and ginger and cook for 1-2 minutes until fragrant.
  5. Remove the chicken from the marinade and discard any excess liquid. Add the chicken to the skillet and cook for 5-7 minutes per side, or until the chicken is cooked through and the sauce has caramelized on the surface.
  6. Garnish with green onions and serve with steamed rice or noodles.
