Ingredients:
2 lbs potatoes, peeled, cut into 1-inch cubes
2 cups water
1 cup chicken broth
6 garlic cloves, peeled
1/2 cup 1% fat buttermilk
1/4 cup thinly sliced green onions
1 teaspoon salt
1/8 teaspoon pepper
Directions:
In a large saucepan, combine the potatoes, water, broth and garlic.
Cover potatoes and bring to a boil.
Reduce the heat and simmer for 12-15 minutes or until potatoes are tender.
In a smaller saucepan, heat buttermilk until warm.
Drain potatoes and garlic; mash with buttermilk.
Stir in onions, salt and pepper.
