Ingredients:
3 medium sliced potatoes, peeled if you wish
3 carrots, sliced
3 celery ribs, sliced
2 cups fresh green beans
1 cup chopped onions
1 lb ground beef ( I use lean)
1 teaspoon thyme
1 teaspoon salt
1 1/4 teaspoons pepper
4 tomatoes, peeled,seeded,and chopped
Directions:
Layer half the vegetables in 3 qt casserole.
Crumble on half the uncooked ground beef.
Mix thyme, salt, and pepper.
Sprinkle half on top of ground beef.
Repeat layers.
Top with tomatoes.
Cover and bake at 375* for about 1-1/2 hour, until done.
