Ingredients:
1 cup grated zucchini
3/4 cup margarine, softened
1/2 cup white sugar
1/2 cup brown sugar
2 eggs
1 teaspoon vanilla
1 3/4 cups flour
1/2 teaspoon baking powder
1/2 teaspoon salt
3/4 cup raisins
1/2 lb mixed fruit
4 ounces cream cheese
1 1/2 cups icing sugar
2 tablespoons butter
1 teaspoon vanilla
Directions:
Cream margarine and sugars.
Add eggs and vanilla and beat.
Mix fruit and raisins with dry ingredients.
Add dry ingredients and zucchini to creamed mixture.
Grease a jelly roll pan, 15 1/2″ x 10 1/2″.
Bake at 350F for 25 to 30 minutes.
Ice when cool.
Icing; Beat cream cheese, icing sugar, butter and vanilla until light and fluffy.
