Ingredients:
1 lb sweet potatoes, cooked and diced.
1 1/2 cups black beans
1 cup roasted bell peppers, julienned ( combination of red, yellow and green would be best)
1 medium papayas, peeled and sliced
3/4 cup watercress
1/2 cup red onions, chopped
1/2 teaspoon chili powder
3 tablespoons garlic oil
3 tablespoons red wine vinegar
1/4 teaspoon hot pepper sauce
Directions:
Combine all ingredients in a large bowl.
Cover and let sit at room temperature for 25 minutes, or refrigerate for 1 hour to let flavors combine.
Serve over fresh greens and garnish with tortilla chips.
