Ingredients:
1 cup cucumbers ( english or other long variety)
2 tablespoons vinegar
1/4 teaspoon salt
1/2 teaspoon black pepper ( freshly ground is best)
Directions:
Peel cucumber and slice (crosswise, as thin or thick as you like).
Mix vinegar, salt, and pepper in a serving dish (don’t use a metal container!) Gently mix in cucumber.
Best if refrigerated for one hour.
