Ingredients:
2 1/2 cups all-purpose flour
1 cup mayonnaise
1 cup sugar
2 cups grated carrots
3 large eggs, lightly beaten
2 teaspoons vanilla extract
1 teaspoon baking powder
1 teaspoon baking soda
1 tablespoon cinnamon
1 teaspoon salt
2/3 cup raisins
1 cup toasted pecans, chopped
Directions:
preheat oven to 350*.
blend all ingredients in bowl, full thoroughly mixed.,divide batter into 2 greased 9×5 loaf pans —
Bake 1 hour — let cool 10 minutes.
then remove from pans to cool completley on wire rack.
