Ingredients:
1 1/2 cups cornmeal
1/2 cup whole wheat flour
1 tablespoon baking powder
3 tablespoons sugar
1 teaspoon cinnamon
1 teaspoon salt
1 eggs
3 tablespoons vegetable oil
3/4 cup pumpkin
1 1/2 cups half-and-half or 1 1/2 cups milk
Directions:
Set oven to 350 degrees.
Grease a 8×8-in square pan.
Sift first 6 ingredients.
Beat the egg well.
Stir in egg, oil, pumpkin and milk into the dry ingredients, just until mixed.
Transfer to baking dish.
Bake for 30-35 mins, or until cornbread tests done.
Cut in squares.
