Ingredients:
2 tablespoons butter
1 clove garlic, chopped
1/2 large potatoes, diced
1/4 cup green peas
1/4 cup chopped broccoli
1/4 cup chopped carrots
1/4 cup chopped zucchini
1/4 cup chopped green bell peppers
1/4 cup shredded cheddar cheese
Directions:
Melt butter over medium heat and saute garlic.
Stir in potato, peas, broccoli, carrot, zucchini and bell pepper.
Stirring occasionally, cook until potatoes start to brown, about 15 minutes.
Serve with shredded cheese.
