Ingredients:
3 cups chopped zucchini
2 ripe tomatoes, chopped
1 small onions, sliced
2 cloves garlic, mashed
1/2 teaspoon oregano
1/2 teaspoon basil
salt and pepper
2 tablespoons olive oil
Directions:
Combine all ingredients in a large bowl–toss to coat everything.
Place in foil packet, seal well.
Grill 25 minutes or until tender, turning every so often.
These could be done in the oven as well: Bake at 375F for 25 minutes, or until tender.
