Ingredients:
1 tablespoon olive oil
1 teaspoon lemon juice
1 clove garlic, minced ( I use one of those frozen cubes)
1 slice cooked bacon, cut up
feta cheese
fresh spinach ( I use the pre-washed bagged kind)
Directions:
Heat olive oil, lemon juice, garlic, and bacon in a small saucepan until hot.
Remove from heat and add desired serving size of spinach leaves.
Toss until spinach is just wilted, transfer to serving bowl.
Top with crumbled feta cheese.
