Ingredients:
4 large tomatoes
1 red peppers
1 yellow peppers
1 green peppers
1 eggplants
2 onions
2 tablespoons olive oil
3 garlic cloves
2 teaspoons salt
1 teaspoon pepper
2 tablespoons balsamic vinegar
200 g orzo pasta
200 g tuna ( canned)
Directions:
roughly cube all vegetables.
spray baking tray with olive oil and put veg in one layer.
drizzle with balsamic vinegar & olive oil, crushed garlic,salt & pepper.
Roast in hot oven appx. 10 minutes.
Remove from tray and mix with flaked tuna.
Serve over pasta.
