Ingredients:
1 tablespoon vegetable oil
2 medium onions, chopped
2 fresh green hatch chilies
4 large potatoes, peeled and diced
boiling water
salt
Directions:
Saute onions until tender.
Add green chiles.
Add diced potatoes.
Mix thoroughly.
Add boiling water to cover, cook down until potatoes are tender and creamy.
Add salt to taste.
Cooked potatoes my be used in place of raw potatoes, but only add a small amount of water to the mixture.
