Ingredients:
3 medium carrots, peeled and sliced
3/4 cup boiling water
1 1/2 cups apple juice

Directions:
In a small saucepan cook carrots, covered, in the 3/4 cup boiling water for 20 min.
Cool.
Put this and the apple juice in the blender.
Cover and blend until the carrots are smooth.
Add additional apple juice if needed for desired consistency.
Chill and serve.

Servings: 2

Time preparation: 5 min.

Time total: 25 min.
