Ingredients:
4 chicken breast halves, grilled
1/2 red onions, finely chopped
2 stalks celery, thinly sliced
1 jalapeno peppers, seeded and finely chopped
1/2 cup mayonnaise ( I use Miracle Whip Light)
1/4-1/3 cup barbecue sauce
1 tablespoon red wine vinegar
1/2 teaspoon garlic salt
pepper, as desired
Directions:
Chop chicken breasts into approximately 1/4 inch dice.
Add onion, celery and jalapeno (if desired) and combine.
Combine remaining ingredients and pour over chicken mixture. Refrigerate.
This is good served on hard rolls and topped with tomato and shredded lettuce.
