Ingredients:
1 lb boneless skinless chicken breasts
1/4 teaspoon paprika
1 teaspoon olive oil
2 cloves garlic, minced
1/3 cup apricot preserves
1/4 cup orange juice
1 tablespoon coriander
1/4 teaspoon nutmeg
1/4 teaspoon allspice

Directions:
Rinse and pat dry chicken with paper towels.
Sprinkle paprika over chicken.
Spray non-stick skillet with non-stick spray and heat over medium-high heat.
Cook chicken until no longer pink inside, about 5 minutes on each side.
Transfer chicken to serving platter and cover to keep warm.
Prepare sauce as follows just before serving.
Add oil to skillet and heat over medium-high heat.
Add garlic, cook and stir for one minute.
Stir in the rest of the ingredients and bring to a gentle boil.
Remove from heat and pour over chicken.
