Ingredients:
1 1/2 lbs chicken pieces
1 teaspoon salt
1 teaspoon pepper
1 teaspoon paprika
6 tablespoons butter ( I use canola oil)
1 large onions, chopped
1 teaspoon crushed red pepper flakes
1/2 teaspoon thyme leaves
1 bay leaves
1/4 cup lemon juice
1/4 cup honey
2 cups coconut milk
1 cup unsweetened coconut
Directions:
Sprinkle the chicken pieces with salt, pepper and paprika.
Heat oil or butter in large skillet and fry the onion with the chicken to brown. Add the remaining ingredients. Cover and reduce heat and simmer for 30 minutes. (if not using breasts it’s more like 45 minutes).
Serve with rice.
