Ingredients:
500 g pork fillets
60 g butter
1 onions, sliced
2 teaspoons curry powder
2 teaspoons ginger, grated
2 tablespoons apricot jam
2 tablespoons soy sauce
1 tablespoon lemon juice
Directions:
Melt butter in a pan, add onion, curry powder, ginger, jam, soy sauce and lemon juice, Stir over low heat until the jam has melted.
Place pork in a greased shallow ovenproof casserole in a single layer, pour sauce over, bake uncovered in a moderate oven about 25 minutes or until pork is tender.
