Ingredients:
6 -8 potatoes, peeled and cubed
1 tablespoon butter
1 cup onions, chopped
2 cups kale, chopped
1/2 cup milk
1/3 cup sour cream
1/2 teaspoon salt
1/4 teaspoon pepper
Directions:
Cook potatoes in water until tender.
Drain.
While potatoes are cooking; Melt butter in large skillet.
Add chopped onion and cook for 5 minutes.
Stir in kale and cook 5 more minutes.
Remove from heat.
Mash potatoes, milk, sour cream, salt and pepper with mixer.
Stir in kale mixture.
