Ingredients:
2 (15 ounce) cans butter beans, rinsed and drained
1/2 red bell peppers, diced
1/2 green bell peppers, diced
1/2 red onions, chopped
2 cloves minced garlic
1 teaspoon ground cumin
2 tablespoons extra virgin olive oil
1 large lemons, juiced
coarse salt
fresh ground black pepper
Directions:
Combine all ingredients in a medium bowl.
Toss to coat beans and vegetables evenly in dressing.
