Ingredients:
1 1/4 cups oats
1 cup flour
1 teaspoon baking powder
1 1/2 teaspoons pumpkin spice
1/2 teaspoon baking soda
1/4 cup soymilk
1/4 cup egg substitute
1 cup canned pumpkin
3/4 cup brown sugar
1/2 teaspoon salt
1 teaspoon vanilla
1 tablespoon brown sugar
1 1/2 teaspoons cinnamon

Directions:
Mix all ingredients except the last two and pour them into greased muffin tins.
For each muffin, mix the 1 Tbsp brown sugar and the 1 1/2 tsp cinnamon and place them on top.
Bake at 375 degrees for 25-30 minutes.

Servings: 12-20

Time preparation: 10 min.

Time total: 40 min.
