Ingredients:
1/2 cup mayonnaise
3 tablespoons Dijon mustard
1 garlic cloves, minced
1/2 teaspoon salt
1/4 teaspoon black pepper
4 russet potatoes, peeled cooked and cubed
3/4 cup sliced onions
1/2 cup bell peppers
1 teaspoon celery seeds
2 hard-boiled eggs
1 teaspoon mustard
3 dill pickles, cut
1 tablespoon pickle juice
Directions:
Mix all ingredients except mayonnaise, eggs, and potatoes in a large bowl.
Carefully add potatoes and eggs, stirring gently so as to not “mush” the ingredients.
Slowly add mayonnaise, add more if desired texture is more creamy.
Let chill and serve!
