Stuffed Apricot Salad for One

Ingredients:
2 -3 fresh apricots, halved and stone removed
1 cup shredded lettuce ( or use a lettuce cup)
4 tablespoons low-fat cream cheese
1 teaspoon 2% low-fat milk
2 tablespoons dates, chopped fine

Directions:
Place the apricot halves on the lettuce on a salad plate.
Mash the cheese and milk.
Spoon into the centers of the apricots.
Sprinkle with the dates and serve.
