Ingredients:
6 carrots, shredded
1 small onions, finely chopped
1/4 cup olive oil
2 tablespoons lemon juice
1 teaspoon curry powder
1/4 teaspoon allspice
1/2 teaspoon salt ( or to taste)
1 dash black pepper
Directions:
Shred or grate the carrots finely.
You can shred the onion, too, instead of chopping it, if you like.
Place carrots and onion in a medium serving bowl.
In a small bowl, whisk together the remaining ingredients.
Pour over the carrots and toss well.
Serve at room temperature, or refrigerate.
