Ingredients:
1/2 cup soaked cracked wheat ( about 2 hours)
2 -3 chopped green onions
2 cups chopped fresh parsley
2 large tomatoes, diced
1 -2 clove garlic, crushed
1 tablespoon olive oil
2 tablespoons apple cider vinegar ( or lemon juice)
salt and pepper

Directions:
Drain bourghul and squeeze out excess water.
In a large salad bowl combine bourghul, parsley, green onions, tomatoes and garlic- mix well.
Add olive oil, vinegar salt& pepper- taste and adjust flavour if neccessary.

Servings: 4-6

Time preparation: 20 min.
