Ingredients:
2 tablespoons butter ( or low-fat substitute)
1/2 cup chopped scallions, bulbs and tops
1 lb green beans, cleaned and trimmed
1 (28 ounce) cans tomato puree
1/4 teaspoon dried basil
1/4 teaspoon dried rosemary
salt, to taste
ground black pepper, to taste
Directions:
In a large skillet, over medium heat, melt butter and saute scallions for 3 minutes.
Add green beans and saute for 2 more minutes.
Add tomato puree, basil, rosemary, salt and pepper.
Cover, reduce heat and simmer until the beans are tender (5-6 minutes) Serve hot or cold.
