Ingredients:
2 cans corn
2 large vine ripened tomatoes
1 cup fresh soft mozzarella cheese ( chopped)
3 leaves fresh basil, large
3/4 cup balsamic vinegar
1/8 cup olive oil
salt and pepper
Directions:
chop mozzarella into 1/2 inch cubes.
tear basil leaves into 1/2 inch pieces.
chop tomatoes into long slices.
mix all ingredients into a large serving dish.
salt and pepper to taste.
tastes best if chilled in fridge for an hour.
