Ingredients:
3/4 cup flour
1/4 cup cornstarch
1/2 teaspoon salt
1/2 teaspoon baking powder
3/4 cup buttermilk
1/4 cup milk
6 tablespoons vegetable oil
1 large eggs, separated
1 tablespoon sugar
1/2 teaspoon vanilla extract
Directions:
Mix Dry ingredidents together.
Measure milk, oil and egg yolk in a pyrex measuring cup. Set aside.
In another bowl, beat egg white, add sugar, beat until peaks are firm and glossy. Beat in vanilla.
Pour milk mix in with dry ingreds. Whisk until just mixed.
Fold in egg white.
