Ingredients:
1 lb boneless skinless chicken breasts, cut into 1 inch chunks
1 (10 ounce) cans Ro-Tel tomatoes
4 (10 inch) flour tortillas
2 cups shredded cheddar cheese
Directions:
Cook chicken and tomatoes over medium heat 10-15 minutes. Set aside.
Fill each tortilla with chicken mixture and some cheese; fold in half.
Cook in skillet over medium heat 3 minutes per side or until crisp. Cut and serve.
