Simple Creamy Pesto Pasta

Ingredients:
2 tablespoons butter
100 g mushrooms, sliced
60 g prosciutto or 60 g ham, chopped
2 tablespoons pesto sauce
500 g penne pasta
2 tablespoons butter
2 garlic cloves, minced
2 tablespoons flour
3/4 cup chicken stock
3/4 cup milk
salt and pepper, to taste
1/3 cup grated cheese ( cheddar, parmesan, whatever takes your fancy)

Directions:
Put pasta on to boil.
While the pasta is cooking, melt the first lot of butter and saute mushrooms, garlic and proscuitto (or ham). Remove from pan, keep warm.
Melt second lot of butter. Add flour and cook 1 minute, stirring constantly.
Stir in stock and milk and cook, stirring frequently, until sauce thickens.
Add the mushrooms, proscuitto and cheese.
Stir until cheese is melted.
Add the pesto, salt and pepper.
Toss hot pasta with sauce and serve immediately.

Servings: 4-6

Time preparation: 15 min.

Time total: 30 min.
