Ingredients:
1 medium onions, finely chopped
4 sun-dried tomatoes, halved and chopped
1 -2 tablespoon olive oil
1 cup couscous ( I prefer the whole wheat couscous)
1 1/2 cups boiling water
Directions:
Heat oil in pan that has a tight fitting lid.
Saute onions until they just start to soften.
Add the tomatoes and continue to saute about 5 minutes more, or until the onions become translucent.
Pour in boiling water, stir and bring back up to a boil.
Add couscous and stir.
Cover and simmer for 10 minutes.
Fluff with a fork when done.
