Ingredients:
1/4 cup unsalted butter
1/2 cup chopped red bell peppers
1/2 cup chopped green bell peppers
1/2 cup minced onions
1 medium jalapeno peppers
1/2 teaspoon minced garlic
1 teaspoon oregano
salt
1 pinch white pepper
1 pinch red peppers
1 cup heavy cream
1/2 cup chicken broth
1 cup monterey jack cheese, shredded
1/2 cup sour cream
1 lb cleaned and deveined shrimp
4 plum tomatoes, seeded and chopped
1 cup chopped green onions
12 (10 inch) flour tortillas
2 cups monterey jack cheese, shredded
Directions:
Melt butter over medium heat in a frying pan, add peppers, onions,jalapeno pepper,garlic and oregano.
Cook until soft, about 5 minutes.
Add salt and pepper.
Mix in the cream and broth.
Bring to a boil, then simmer 3 minutes.
Stir in the cheese until melted.
Remove from heat add the sour cream.
Keep warm.
