Ingredients:
1 medium eggplants, cut into 1/2 inch slices
1 tablespoon olive oil
2 tablespoons orange juice
1 tablespoon miso
1 tablespoon honey
1 teaspoon orange zest
1 dash cayenne
Directions:
Place eggplant slices on a greased or sprayed baking sheet.
Brush with olive oil.
Bake at 400 F for ten minutes.
Whisk remaining ingredients together.
Turn eggplant slices over and brush with glaze.
Bake for 5 minutes.
Turn eggplant slices over and brush with glaze.
Bake for 5 minutes more.
