Ingredients:
1/2 teaspoon ground cumin
3 cups grated carrots
1/4 cup golden raisins
1 tablespoon fresh Italian parsley, chopped
1 tablespoon fresh cilantro, chopped
3 tablespoons fresh orange juice
1 tablespoon fresh lemon juice
2 teaspoons olive oil
1/4 teaspoon salt
Directions:
Place cumin in a small skillet.
Cook over medium heat 2 minutes or until toasted and fragrant, stirring frequently.
Combine cumin and remaining ingredients in a bowl.
Cover and chill.
Serve cold 1/2 cup servings.
