Ingredients:
1 1/2 tablespoons lemon juice, freshly squeezed
1 garlic cloves, chopped
2 tablespoons extra virgin olive oil
2 (15 ounce) cans cannellini beans, drained and rinsed
1 (6 1/2 ounce) cans tuna in water, drained and flaked
1/3 cup sun-dried tomatoes, sliced into thin strips
1/4 cup red onions, minced
2 tablespoons fresh parsley, chopped
Directions:
In a medium bowl, blend lemon juice, garlic, salt and pepper.
Gradually whisk in olive oil.
Add the beans, tuna, tomatoes, onion and parsley.
Cover and chill.
