Ingredients:
2 1/2-3 lbs beef shank
1 large onions, chopped
2 -3 tablespoons butter
1 bay leaves
1 tablespoon salt
1/4 teaspoon pepper
4 cups cabbage, shredded
1 1/2 cups leeks, chopped ( white part only)
1 1/2 cups celery, diced
1 cup carrots, grated
10 cups water
Directions:
Simmer beef shanks in water (see note)with bay leaf, salt and pepper for 2 1/2 to 3 hours. At the same time brown onion in fry pan, then simmer along with meat.
Add remaining ingredients and simmer 15-30 minutes longer.
