Ingredients:
1/2 cup butter, softened
1/2 cup sugar
1 eggs
1 cup molasses
2 1/2 cups all-purpose flour
1 1/2 teaspoons baking soda
1/2 teaspoon salt
1 teaspoon ground cinnamon
1 teaspoon ground ginger
1 cup hot water
sweetened whipped cream
Directions:
Cream butter; gradually add sugar, beating at med. speed with an electric mixer until light and fluffy. Add egg and molasses, mixing well.
Combine flour and next 5 ingredients; add to creamed mixture alternately with water, beginning and ending with flour mixture. Mix after each addition.
Pour batter into a lightly greases and floured 9 inch square pan. Bake at 350F for 35 to 40 minutes or until wooden pick inserted, comes out clean. Serve with a scoop of whipped cream.
