Ingredients:
2 large English seedless cucumbers, thinly sliced ( 3 medium)
1/2 medium onions, finely chopped
4 garlic cloves, finely chopped
1/2 jalapeno peppers, finely chopped ( or birdseye pepper)
1 tablespoon cilantro, finely chopped
1 cup white vinegar
1 1/2 tablespoons white sugar
fresh lime juice, a squeeze
Directions:
Mix all ingredients together in a large mixing bowl.
Let sit in fridge for at least 2 hrs, preferrably overnight before eating.
